Back-to-School Freezer-Friendly Breakfasts

Homemade freezer breakfasts are ideal for busy families that want to avoid processed convenience foods for breakfast. Use fresh, whole-food ingredients to create delicious dishes that can be frozen in individual servings for family members to grab and reheat when needed. For truly homemade dishes, make your taco shells, biscuits and pancakes from scratch.

1. Breakfast Burritos

  • 12 soft tortillas 
  • 12 scrambled eggs
  • ½ teaspoon red pepper flakes
  • ½ cup chopped, sweet red pepper
  • 1 pound sweet Italian sausage, cooked and drained

Add chopped pepper and red pepper flakes to eggs while scrambling. Assemble burritos by layering eggs and sausage onto a shell. Fold shell around ingredients. Wrap burritos in foil or plastic wrap. Stack inside a freezer bag for freezing.

Remove foil before microwaving on high for one to two minutes. Or, reheat in an oven for 10 minutes at 350 degrees.

2. Freezer Pancakes

  • 1 egg
  • 1 cup flour
  • 3 teaspoons baking powder
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • ¾ cup milk

Mix all ingredients. Cook in hot skillet over medium heat.

Homemade pancakes freeze really well. Make a double batch on the weekend to freeze for quick weekday breakfasts. To prevent the pancakes from sticking together when frozen, place a piece of parchment paper in between pancakes. Reheat by toasting. Serve with syrup and fruit.

3. Freezer Ham & Egg Biscuits

  • Homemade biscuits
  • Cooked sliced ham
  • Eggs
  • Vegetable of your choice; frozen spinach, chopped peppers, shredded carrots or any other favorite vegetable

Scramble eggs with vegetable. Cook as an omelet, but refrain from folding over. Slide omelet onto cutting board. Use a cookie cutter to cut biscuit-sized pieces of omelet and ham. Layer both inside a fresh biscuit. Wrap in foil or plastic wrap. Freeze.

Reheat in microwave for one to two minutes or in an oven for 10 minutes at 350 degrees.
